Matevž: a traditional Slovenian winter delicacy on a plate
Slovenian cuisine is known for its simplicity, and matevž is one of the dishes that best exemplifies this. It is a traditional porridge made from beans and potatoes, which comes from rural parts of Slovenia, especially from the Kočevje region. This modest but nutritious combination is often served with meat and sour side dishes, such as sauerkraut or beets.

Matevž traces its roots back to the time when peasants in Slovenia had to use locally available ingredients to prepare nutritious meals. Beans and potatoes, as the main ingredients, were readily available. In the past, it was most often prepared in winter, because it was filling and easy to prepare, which made it ideal for families who lived from agriculture.
INGREDIENTS AND PREPARATION
The main ingredients of matevž are very simple:
- Potato
- Beans – usually white beans are used, which gives a mild taste.
- Garlic and onion
- Salt and pepper
- Pork fat
The preparation of matevž begins with cooking potatoes and beans until they are soft enough to be mashed. After cooking, the potatoes and beans are combined and mashed into a mixture that is creamy but retains some texture. In some recipes, sautéed onions and garlic are added to give the dish depth of flavor.
The traditional Slovenian way includes the use of lard, which gives the dish extra richness, although butter or olive oil is increasingly used today.
HOW IS IT SERVED?
Matevž is often served as a side dish, but it can also be an independent meal. It is most often combined with pork dishes, such as roast pork, Carniolan sausage, or pork ribs because the rich taste of the meat perfectly complements this creamy combination. In some regions, it is also served with pickled greens or pickled beets.
Another classic combination is matevž with cracklings, a traditional delicacy made from crispy pieces of pork fat from across the Adria region. This combination creates an interesting contrast in texture, making the dish even tastier.

Although matevž originates from tradition, it has also found its place in contemporary Slovenian cuisine. Many chefs still prepare this dish in the same way as their ancestors, although modern versions are sometimes enriched with new ingredients. It is especially popular during festivals and cultural events, where locals and visitors can experience a taste of some bygone times.
Matevž is not only a dish, but also a symbol of resilience and ingenuity. It reflects a time when food had to be nutritious and filling to sustain families through cold winters and hard-working days. Today, although Slovenia has embraced many modern food trends, matevž occupies a special place in the hearts of the Slovenian people. Be sure to try making it yourself!
