RECIPE FOR Paçe koke
Ingredients
The following ingredients are needed for preparation:
- 1 head of lamb or veal
- 1 onion
- 5 tablespoons of olive oil
- 1 tablespoon of butter
- 4-5 cloves of garlic
- 1 teaspoon of red pepper
- 1 teaspoon of tomato puree
- 7-8 black peppercorns
- 1 teaspoon of oregano
- 2 bay leaves
- A little parsley
- Salt and hot pepper to taste
Preparation
- Clean and wash the head of lamb or veal thoroughly. Place it in a large pot with salted water and cook over medium heat until the meat is tender and begins to fall off the bones. After cooking, remove the head from the broth and strain the stock through a colander. Leave the meat to cool slightly, then carefully separate it from the bones and cut it into smaller pieces.
- Heat the olive oil and butter in another pot. Add the finely chopped onion and fry until translucent. Then stir in the red pepper, tomato puree, chopped garlic, black peppercorns, bay leaf, and oregano. Now add the stock to all of this. If you want it thicker, you can also make a gravy.
- Return the sliced meat and bring everything to a boil. Then reduce the heat and let it simmer gently for about 15-20 minutes so that the flavors can blend. Add salt to taste and sprinkle with freshly chopped parsley before serving.
