Flija – an authentic Albanian dish that you must try
Albanian cuisine reflects the region’s rich history and diversity, combining Mediterranean and Balkan influences. Based on fresh, local ingredients such as vegetables, meat, and dairy products, Albanian dishes are often simple but full of flavor. One of the most interesting traditional dishes is flia, a specialty of northern Albania and Kosovo.

Flia consists of several layers of pancake-like dough coated with cream or butter and baked to perfection. This dish symbolizes Albania’s traditional hospitality and is often prepared in rural areas. It is traditionally baked on an open fire under a metal lid, that is, a honeycomb.
It is very famous in villages like Theth and others within the Albanian Alps.

FLIA RECIPE
To prepare this interesting authentic dish, you need the following:
Ingredients:
- 1 kg of plain flour
- 1 liter of water
- 1 teaspoon of salt
- 200 g of butter
- 200 ml of sour cream or cream
Preparation:
- In a large bowl, mix the flour, water, and salt until you get a smooth mixture without lumps, similar to pancake mix. Let it stand for 30 minutes.
- Heat the oven to 200°C. If you have a honeycomb or similar metal lid, you can use it for authentic preparation on an open fire.
- Grease a round pan or shallow dish with butter. Pour a thin layer of dough into the dish, spread it evenly, and bake for 5-7 minutes until it takes on a golden color. Then remove the dish from the oven and coatit with melted butter or cream.
- Repeat the process of adding batter and coating until you have used up all the ingredients, creating more layers. Bake each layer until golden before adding the next.
- After adding the last layer, bake the flia for an additional 10-15 minutes until it is completely cooked and golden brown.
- Take it out of the oven and let it cool down a bit. Cut into triangles and serve warm with sour cream, honey or yogurt.
