It is believed that they were created during the Arab rule in Sicily, and they got their name from their resemblance to small oranges (“arancia” in Italian).

Arancini comes in many varieties. In Palermo, they are often filled with ragu, while in Catania they are cone-shaped and sometimes contain aubergines. Each version reflects the rich history of Sicily, where Arab, Norman, and Italian influences come together.

RECIPE FOR SICILIAN ARANCINI

Ingredients (for 4-6 people)

 

For the rice:

 

2 cups Arborio or Carnaroli rice

4 cups of chicken or vegetable stock

1/2 teaspoon of saffron (optional, for authentic flavor and color)

1/4 cup grated Parmigiano-Reggiano

Salt and pepper to taste

For the filling:

 

1 cup ground beef or veal

1/2 cup frozen peas

1/2 cup of pureed tomatoes (or peeled)

1/2 small onion, finely chopped

1 clove of garlic, chopped

1 tablespoon of olive oil

1/4 cup red wine (optional)

Salt and pepper to taste

For breading:

 

2 large eggs, beaten

1 1/2 cups breadcrumbs

1/2 cup plain flour

Vegetable oil for frying

 

Additional options:

  • Mozzarella cubes for a soft, melting center
  • A pinch of nutmeg in the rice for extra depth of flavor

 

STEP BY STEP TO THE PERFECT ARANCINI’S

 

1. Preparation of rice

Heat the water in a medium saucepan over low heat. Add saffron threads (optional) and then stir in the rice. Cook over medium heat, stirring frequently, until the rice has absorbed all the liquid. The rice should be soft and sticky.

Remove from heat, add grated Parmigiano-Reggiano, and season with salt and pepper. Place the rice on a tray to cool completely.

 

2. Preparation of the filling

Heat the olive oil in a pan over medium heat. Add chopped onion and garlic, and sauté them until fragrant. Add the minced meat and fry until golden and glaze with wine (optional), then stir in the pureed tomatoes and peas. Simmer for 10-15 minutes until the mixture thickens. Season with salt and pepper and leave to cool.

 

3. Shaping arancini

Wet your hands and take a handful of rice. Shape the rice into a disc. Put a spoonful of filling (and a cube of mozzarella) in the middle. Carefully shape the rice ball, making sure that the filling is completely enclosed.

4. Breading of arancini

Roll each ball in flour, then dip it in beaten egg and finally in breadcrumbs. Place the balls on a tray and put them in the fridge for at least 30 minutes to firm up.

 

5. Frying to perfection

 

In a deep pot or fryer, heat the vegetable oil to 175°C, and fry the arancini in smaller quantities, turning them occasionally, until they take on a golden-brown color (about 3-4 minutes). Drain them on paper towels and serve while they are warm.

Arancini can be served with marinara dipping sauce or on their own to enjoy the full flavor. For an ideal meal, serve them with a glass of white wine or fresh lemonade.
