Top kitchen of the Hiša Franko
The story and philosophy of Hiša Franko is closely related to the tradition and environment of Posočje. An environment that is sometimes harsh and difficult, but hauntingly beautiful. Restaurant Hiša Franko is located at the foot of mountains and high mountain pastures near the border with Italy. It builds his kitchen on the best that nature has to offer according to the seasons.
Posočje is an area in northwestern Slovenia and includes the area around the Soča river. The diet here has always been based on dairy and meat products, so expect a lot of cheese and all the by-products of its production on the menu. Hiša Franko is also closely connected with communities of pickers, mushroom growers, shepherds, cheese makers, hunters, and fishermen, so the menu is rich in trout, game, forest fruits, and wild herbs.

Hiša Franko is a newcomer to the list of the 50 best restaurants in the world (50 Best), but its heritage goes back more than half a century when the owner’s father Franko served his famous Franko’s roast beef.
In June 2020, when the first edition of the Michelin Guide to restaurants in Slovenia was published, Hiša Franko received two Michelin stars. Chef Ana Roš, whose superb cuisine has been capturing the attention of gourmets for a long time, is certainly the most responsible for this. She was the first woman to get her own episode in the Netflix series Chef’s Table and became a global star.

Ana Roš and her husband Valter Kramar opened Hiša Franko in the old inn of Kramar’s family, which has since been renovated, and for a table in the restaurant you have to book an appointment at least 10 days in advance. And yes, the dishes are not ordered ala carte, but there are prepared tasting menus with current ingredients, so it’s good to know that in advance. 🙂
